Vegan Chickpea Egg Salad
(Makes Four Sandwiches)
Ingredients:
- 2 tsp Eggcellent
- 1 can (15 oz) smashed chickpeas
- 1/4 cup diced sweet onion
- 1 stalk finely diced celery
- 3 Tbsp diced pickles
- 4 Tbsp Vegan mayo
- 2 Tbsp fresh chopped cilantro or any herb you prefer
- 2 Tbsp Vegan Dijon mustard
- 1 tsp lemon juice
- Black pepper optional
Instructions:
- Drain then roughly mash the chickpeas in a large bowl. Don't overdo it.
- Add all the other ingredients into your mixing bowl and combine them.
- Voila! Easy Vegan egg salad
